got a new smoker fired it up let it set at high to break it in for about an hour brought it down to 200 threw my walmart pork loins on after i seasoned, and let it smoke for 2-3 hours then brought temp up to 225, now it looks like its dehydrating doesnt even look like it will be good to eat. what did i do wrong? i can post pictures of the atrocious cook i did if needed 
 
B21, Was it a loin or a tenderloin?  Approximately 4 hours for a loin vs 2 hours for a tenderloin @ 225*. You need  accurate chamber temps and meat temps by using a Maverick or other temp device. I do my loins or tenderloins to 145-147 and remove and rest 5 before slicing.
