Newbie Jeff here, who is an Okie transplant living in Keller, TX.

Finally, dumped the Brinkmann after 19 years(got my $$$ worth on that one) and made a slight upgraded to the Oklahoma Joe Highland. Chicken and ribs worked out ok on the old smoker, but now looking to move beyond average to the next level.

Looking for any suggestions on how to help hold and keep the heat steady as that is my biggest challenge with the Okie Joe.
