How do you make Jerky?

Hi Everyone. 

Been lurking this page for over a year now, figured I would finally signup and join the fun. 

Started smoking a year ago when I got my Weber grill. Started with Ribs, then I also picked up a old used Big Chief to make some jerky last year, and lets face it, I was hooked.

I tried a ECB, but was not really a fan, to many mods needed to make it work they way I want.

So now I am waiting on the Delivery of my Dyna-Glo DGO1176BDC-D Charcoal Offset Smoker!!!

I have already read through the forums on this smoker and ordered some nomex and RTV for when I am putting it together. And can't wait to get going with it!!!

I do have a question. I was able to convince the wife to let me get this purely for doing Jerky, now I am reading a lot of people not recommending using charcoal for Jerky. I would assume the would be do to the temp control. Anyone on here have any luck smoking and Drying jerky in a offset smoker such as this?


Now don't get me wrong, I see plenty of Ribs, Briskets and chicken in this smokers future, but I am just trying to avoid the Wrath of Wife here, lol. 

Look forward to your suggestions and input!! Now back to the forums fro some more learnings!
 
Brad, welcome to SMF!  Glad you are here and looking to stay out of trouble with the law.

I can't help you with the offset question.  I'm sure someone will be along shortly.  

BTW, a blower to maintain temps would help, so start working on your convincing arguments now counselor!

Thank you for the welcome. 

Got the smoker set up now. I made some ribs last weekend from my first go with it. Turned out pretty good. 

Now for some pics.....




I am modifying it this weekend with a electric element so I can do some jerky!!
