Hi everybody,

I just bought my first smoker a GOSM 3895GWLA.  I was looking at many different ones from Masterbuilt and Smokey Hollow but the models available in my area weren't large then I found the GOSM and was sold on nothing else then the size.  It can fit a whole rack of ribs with cutting them.  One thing that I was disappointed in was that I couldn't find a double walled unit.  I would thing that you would get a more consistent with less heat escaping but then again I'm a newbie.  Live in MN and grill all year round - Weber propane which I've had for 20 plus years.  got into grilling by having my brother some a couple of wild turkey breasts while he had on 3 chickens so taking the plunge.

I've had the smoker since April and have smoked ribs, 2 whole chickens, 1 turkey and a brisket.  I rushed the brisket (12 hours should have been 16 hours).  The major problem I have is maintaining a temperature.  I put a needle valve in line but the temperature still wanders up or down about 10 degrees in and hour.  My goal is to set and only adjust once every 2 to 4 hours.  Also, looking for suggestions on how much wood chunks to add at a time?  One last thing - I exhaust vent is fused in position.  I believe the problem is creosote build up (black stuff) - is that normal?
