How do you cook your dry aged steak?

Saturday is the day barring any obstacles! My soon to be 31 day dry aged Umai bag ribeye will be ready for devouring. How do you all cook your steaks? Grilling really isn't an option but I have a cast iron pan and a Sous vide IC. I want the best damn steak possible so what would you do? TIA!
 
I have found that using the sous vide method works very well on my dry aged steaks. Simply salt and pepper the steak and place in bag with a pad of salt free butter, and cook to your desired temperature. Will be ready in ± 1.5 hours. Pat dry and sear in very hot skillet with butter and oil.
