Well, I just completed my first smoke. I did a pork shoulder smoked with hickory. I didn't do anything too fancy, just followed the rub recipe I found on allrecipes.com for Bobs pulled pork.

I started it at midnight Friday night and finished at 5 pm today. I only had a couple temperature issues but was able to figure out it had to do with the amount of charcoal I had in the WSM. From midnight to 4 am it ran steady at 225 with no issues. At 4 am, started to lose heat. When I adjusted it a bit, and by a bit I mean barely even opening up the vent, the heat would get too high. After going back and forth like this for a bit, I looked and found I didn't have much charcoal left by 8 am. I added more at that time and got a good 2 hours steady again. When the temps fluctuated again after that, I added more charcoal and the temps leveled off again.

Towards the end of the cook, I could not get the IT over 188. So I foiled it, and pout back in the smoker for 30 min with all vents fully opened reaching cooker temps of 275. I took the shoulder off at 5 pm unwrapped it, sprayed it with apple cider, wrapped it in foil, towels, and put it in a cooler. I did an hour and 15 minute rest and took it out to serve. When I took it out of the wraps it had an IT of 177. Turns out we forgot buns so.....I sliced it as best I could. It definitely was easy to pull....the bone came out without even having to put a knife or fork to it. Just grabbed it and picked up....the meat just slid right off. Here's how it looked::



It tasted great and everyone loved it. Now to figure out what to do next, and to learn how to control temps a little better. What can I say...this 17 hour smoke has got me hooked.

Looks great,practice and you will get the vents figured out. Reverse seared Tri tip is a quick and tasty smoke if you can find one chicken parts are great as well maybe even spatchcock a whole bird,you will need to crisp the skin on a hot gasser,under your broiler or put a rack over the coals with the middle removed from your WSM.
 
Nice smoke!  Did you start with a full basket of charcoal?  I get an easy 8-10 hrs without touching a vent with my 18.5 WSM.  When the temp starts dropping, I start futzing with the vents and can get a few more hours before needing to add charcoal.

Looks like a successful smoke, Try cooking at a higher temp next time if you don't want to do the 17 hour shift. I usually cook from start to finish at 250 to 275. Translates to about 8 to 12 hours.

I always start with a full basket of charcoal & in my 22.5 I can get 20+ hours without adding any charcoal or wood.

Just mix the wood in with the charcoal and add about 10-12 light coals. After it stabilizes you should get even temps without having to fool with the vents.

Glad to hear your first run went well. Sounds like you adapted well to changes and got back on track quickly. All tips above will help and will be the norm after a short time. Do another shoulder relatively same size with the changes and start dialing in your unit. Experiment with other things, sure, thats the fun of it. Practice knocking off time with steady higher temps to yield the same end product, for me, is really getting to know my unit. Last hybrid I built I ran a rack of ribs thru it just about every weekend till I didnt have to babysit it anymore and they where the same time after time. The key is you had a pleasurable time with some good eats. Good for you.

I think my main issue on why my charcoal was not lasting very long was how much I used for a starter?? I did use a full chimney on top of a full ring. Maybe next time I'll just count out 10-12 pieces of charcoal and see how that works.
 
Good start! You're on the right track, it just takes a few times to start to get the hang of it, plus accounting for outside factors like weather.
 
I've been using 12 pieces of chimney lit coals to start my smokes on my 18.5 and it takes about a half hour to get to 250. And I get good mileage this way. However I am running a Digi q 2 as well. For your first run looks like yoh did a nice job.

Looks good! Good bark good smoke ring. I did two butts yesterday and smoked around 275 and was done within 8-9 hours. Keep it up!!
