Hello just joined today as it says I'm from SC and lived here all my life. I just bought a Masterbuilt propane smoker and love it.I owned a smoker some yrs ago and smoked a little but didn't keep covered and the elements soon destroyed it.So now I'm back into it. I do some grilling and deep frying but took a liking to smoking and would like to learn all I can from you guys. I also want to look at mods to do to my smoker also. Glad to be apart of this forum. My Materbuilt is the 30" dual door propane smoker. So far I've bought the Maverick 733 and love it, bought the weber foil pans to use as replacement for water pan. Plan on buying a seasoned fry griddle to sit on top of chip plate to use for chips. I think its and 9.5 inch. I seen this mod on an youtube video. Any more info you all can give would be appreciated!!
 
I never really had a good charcoal grill to work with. They all seemed to burn out fast (coals) So I thought charcoal smokers would to. May try on my next purchase.

Charcoal is a bit tedious with having to "babysit" all day. I actually purchased an electric master built last season and use it more often than my beast wood smoker, it's quicker and easier to get going and with proper chips or pellets its set and forget.
What will you be using for wood in SC? I'm guessing pecan? Up here in the NE I use mostly cherry for everything with the exception of cheese which is always apple. I have been k own to use some maple on some maple BBQ ribs or salmon.
 
I mainly use Hickory and ocassionally use Apple,Mesquite. I hadn't tried Pecan yet but was tipped by a good friend to try it.

I am new too from Roanoke Rapids North Carolina. I use all three wood,charcoal and gas haven't tried pellets yet. I'm sure you will get good results on your butts. Same process....low and slow. You can always add a wood chip tray for choice of flavor. I do my butts on my UDS with charcoal and apple or oak for flavor. Smoke on brother
 
Oak huh? Any particular kind of oak? I've heard long ago to not use oak, but recently I'm hearing of people using it. What kind of smoke flavor do you get out of it, heavy I imagine.
