I did a smoke the other day, it was a bit chilly, around 35 with a slight breeze, it seemed to take forever to get up to temp, and then I put a 3 lb meatloaf in there and although it got up to 155 IT at around 4hrs, I was honestly a bit worried about it because it really never got back up to 220
I'm using a 1550W finned heater sunk down in a SS pan, so it does hang outside of the box, which is insulated with roxul, and the intake is flowing directly across the heater. I'm using a Auberins SMD100 to control it. its 14x24x39 inside IIRC
I'm running the heater at 85% so I'm wondering if I could get another identical heater, mount it right above the other, and wire it in parallel with it, then turn the output of the SMD100 to 50% which would give me 1550W, IIRC the SMD is rated up to 1800W, its all 120V, I have a 15 or 20 amp breaker switch, a 25amp SSR, and all the main wires and the cord are 10g.
I'm not toatally unhappy with the way it works now, everything Ive cooked so far has gotten done in about the right amount of time, but I just think that it should probably come back up to cooking temp a bit faster, maybe not, I'm just a smoker noob.
