Hey Guys,

Smoking my first piece of meat on my brand new MES 30. Nervous but excited. Season with Paprika, Salt, Pepper, Garlic Salt. Gonna smoke it at 220* for about 2 hour. Wish me luck!

Should be tasty. Try reverse sear. Smoke until you get to an internal temp of 10-15 degrees below where you want it finished at. The sear it over a hot grill.

In order to get full smoke I like to run my smoker around 180 for beef roasts. Cherry or cherry pecan mix is my favorite for beef.

Works great.

Don't forget to slice against the grain. Runs multiple ways.
 
Thanks DS really appreciate the tips! Smoking with hickory. I will just need to do a lot of smoking to find out what works best for my taste which I am perfectly ok with haha. Thanks again
