Thanx Richie my electric smoker came with a temp prob so I can check it easily, a sear on the grill is something I'm gonna try ribs have been on for a hour trying to time it so they'll be done before the old lady goes to work

David I would not depend on the built in probe, unless you were able to test it

Oh guess I can buy a different one and see the difference, but as for today bout 3hrs in and temp reads 170
 
191 IT then got my gas grill up to 500 cooked for 3min,not fall off the bone tender BUT sliced like melted butter! Very tender n flavorful

David I think they look great,now all you need to do is check the probe. I have to give you a point for trying

Those look great!  I love sweet baby rays.  I've only done baby backs a couple times, I prefer the st louis cut.  more meat.  I've never checked temp on them.  I just cook them for 5 or 6 hrs, sometimes 7 if they are thick or my smoker was not running as hot.  Cook till the bark breaks when I lift them with my tongs.  great job, great meal!
 
Thanks I used to check my ribs by feel they gotta be a little floppy a lot of give but since I'm new to smoking most of the reading I've been doing IT temps is key, sweet baby rays is my favorite got a bunch of freebies when I went to a race in Memphis been hooked ever since
