Since you guys post some delicious looking grub, I'll play along until I run out of unique ideas. I recently did a chicken on the new MES and it turned out pretty good. I'm a big procrastinator and didn't do a brine, but that probably would have made it perfect.
I only have the Pitmaster Choice pellets so far so used those with the tube and set the temp at 225. I cooked until 165* IT and used most of it for Zucchini enchiladas since my wife is trying to cut carbs. The rest went into some quiche but mostly in Sopa de Arroz con Pollo (chicken and rice soup for you Gringos.
