need help converting a small walk in cooler to smokehouse

I have recently acquired two 3 phase walk in coolers, one of which works well, the other is 7’x8’x8’ tall, it has no floor, no condenser, compressor or any working parts, just all of the wall/roof panels and a nice cooler door. I found two rolling sausage racks at an auction that will fit perfectly side by side.  We will process about 3,000lbs of deer sausage for friends, family and buddies in my hunting club through the season.  I have built the insulated slab with a drain in the middle, and I will get a smoke generator, but I can’t seem to find a heat source to get the unit to max 180 degrees, and a good way to circulate the heat so that it all stays a consistent temperature throughout the entire room. The foam panels have a galvanized metal layer on both sides and the foam is rated for up to 400 degrees. I would love to find something electric that I don’t have to baby sit with a thermostat. Any ideas?

Hello ram, I am not an electric smoker enthusiast, just know someone will be around to help you with your conversion. A heat source is just that, you will get it figured out. You are on the right SMF for this, make sure to keep us all posted as to your progress.
