Hey everyone,

My name is Brett and I'm from northwest Ohio. Started smoking last year when my wife(fiance at the time) bought me a charcoal smoker. It was a vertical, char-broil(maybe). Used it quite a few times but got frustrated a lot and didn't quite have the patience to baby sit it all day to keep an even temp. I recently picked up a Char Broil Digital Electric Smoker, it was on sale and I had some menards rebates so I only paid like $25 for it. Smoked a rack of ribs yesterday using the 3-2-1 method and they turned out fantastic. Looking forward to smoking more often and trying more things. To date I've only smoked ribs, pork butt, and tried brats once but I overcooked them and they were terrible.

Brett, welcome to SMF!  Glad you are here and learning what works best for you.  We all have our "terrible brat" stories about some kind of meat.  I love using my "lessons" in chili, soups, potato scrambles, you name it.  They ALWAYS get eaten!

Have fun!

Ray
