I made a post on Monday night and wasn't getting any comments which had me thinking maybe something looked wrong with my food or something like that, but was told from other members that my pictures weren't uploaded correctly. I did it through my phone so the pictures had to be downloaded (didn't realize that). So I decided to redo the post and get the pictures uploaded properly.

Unfortunately I do not have a Sam's in my area and I don't have a Costco membership so I did my shopping at Publix because I trust the quality of their meat. I have a BJ's card but have read a lot of bad things about the quality of their meat and have gotten some very fatty spare ribs from them before so that was out of question. I spent $97 for 6 racks of baby backs which I thought was really pricey and $18 for 6 short ribs. If any of you know somewhere else that sells good quality meat for a nice price I'd love to know for the future. 

I ended up smoking the short ribs on Saturday while I was smoking 2 racks of ribs that I sold to one of my friends. I figured I would add something on the smoker for myself instead of doing all that smoking without trying any of the food. The short ribs were really good, but the biggest one didn't get as tender as the smaller ones, but it was still good, not tough at all. 

On Sunday I smoked 4 racks of baby back ribs. I finally tried foiling my ribs with brown sugar, honey and Parkay squeeze butter and I really liked the result, gave the ribs a nice glaze and a little bit of a sweet flavor (was worried it would be too sweet). I think I like the Weber Smokey Mountain even more than I did the first time I used it, the minion method worked perfectly and when I went to go clean it the next morning the fire still wasn't out. Overall good weekend, no complaints.

Did you keep the fire going purposely? When I shut my WSM down it's usually cool within an hour.

I didn't do it purposely. I closed one of the vents and left two of them open a little and just let it go out on its own. The next morning it was at 100, good to know next time I do a brisket.

Looks tasty,what size WSM did you get?

I got the biggest one they had, the 22.5"

I only have a 18.5 but I picked up a 22.5 kettle to use as a rotisserie and am looking for a used/deal on a 22.5 WSM. The rotisserie is the Cajun bandit rotisserie ring and spit I think you would find it a cool accessory to your WSM sometime and possibly a kettle as well.:biggrin:

Very good looking meat.

I buy my stuff from Sam's or anyplace that has a sale going on.

I learned how to cook not the best bought meat.

Fatty ribs just need cooked right.
 
Good looking cook, YJ, and I think the pics helped this post--look at the comments.  Your next purchase?  A freezer--that way you can stock up when bones/brisket/butts/etc. are on sale, and not have to pay full boat.  Smaller (5-7 cu. ft.) freezers can be had for under $200, don't take up much space, and you'll make it up pretty quickly with buying on sale.  I get the newness of the smoker and wanting to play with it as much as possible right now, but buy your meats right, and you'll likely enjoy the smoke that much more:  your wallet will thank you!
