Beef ribs, AKA "Dino bones" in the smoker. Done! Q view up!

Done, and ohh sooooo good! 

My back has been really giving me grief lately and I had to take a pain pill and lie down for a while in the middle of the cook.  I pulled them at 160, put them in  a pan on a rack with some beef stock in the bottom, covered with foil and finished them in the oven while I took a short rest.

Fall off the bone tender, very moist and full of beefy goodness!

  Just get to know your butcher, bribe them once in a while with some smoked goodies and you too can get the good stuff!

My absolute favorite to smoke is "Boneless beef ribs" which is a big, beautiful hunk of well marbled meat cut from the heart of a shoulder clod.  I usually have my butcher carve me out a 6-7 pound chunk whenever I catch it on sale, or can convince him to let me have the sale price.  It still costs $4.99 per pound, so is almost double the price of a brisket flat.  The plus side is there is zero waste to the shoulder clod as they trim them really well for me.
 
Radio those are amazing looking!  They are so pretty they almost look fake, you know those things they use to take commercials photos for ads. The smoke ring is perfect, the meat is not to red  and jucie while not falling off the bone. Great job!

My butcher retired last year. She now lives at her hunting camp 24/7. I always gave her some andouille, bacon, boudin, etc.... and a bottle of Crown for Christmas.

Great job on some really pretty meat.

Ugh I need to get my smoker rewire job finished soon.  I'm delaying all smokes until I have it done but the wait to smoke meat is killing me so maybe I'll cave and smoke something before I start tearing things apart hahahaha :)
