Knocked off work super early today and wondered what to do with myself, oh i know.. ill try smoke some chicken thighs for the first time!

Got home, pulled some thighs out of the freezer and softend them up a little under running water. Rubbed with just some mexican taco seasoning and got the UDS crankin at 275

No brine, skin off.. to be honest totally wasnt expecting them to turn out super good but i thought id give it a whirl and oh boy was i wrong!

Probably some of the juciest chicken thigh ive ever eaten! Didnt really probe temp, just checked every now and again to moniter doneness
