When you walk into a local meat market and you see slabs of translucent halibut with no smell whatsoever, it's what you have for dinner.



Simply seasoned with SP and EVOO. Onto a hot grill to medium doneness. Topped with mushrooms sautéed with shallots, butter and white wine. Sautéed snow peas and a baked Japanese sweet potato on the side.


Here in landlocked Idaho, that was some of the best halibut I've ever bought.

Thanks, c! It's been interesting. Even though we're landlocked, we have access to seafood from the PNW and Alaska. Although the diversity may not be what it was in the San Francisco Bay Area, the quality is just as good, if not better, and the prices are equivalent and sometimes much cheaper.

Check that, Idaho sucks. If it's not frozen, it's on fire. Just sayin'.

That's what I call a treat dinner.

That reminds me to get some - I saw some supermarkets advertising the start of the halibut season. Costs a pretty penny but what a sweet fish,
 
Nice dish.  Some day when you have excess funds, go buy a bunch of Halibut and smoke it.  Unreal flavor.

We'll do halibut several times a year. It is spendy. It's awesome in street tacos.

Nice dish.  Some day when you have excess funds, go buy a bunch of Halibut and smoke it.  Unreal flavor.

We use to cruise Puget sound up to the north end of Vancouver island (insurance company wouldn't insure beyond that point without more $$$).
Anyway, that looks just as good as anything we caught and grilled. I didn't see any grill marks but not much is showing in your photo. Did you bake it in the grill? We usually do.
