Never fixed a flat iron steak but I'm gathering a rare or med rare grilling will be great. Couldn't pass up trying when my favorite butcher had USDA prime on sale. Let me know if I'm gonna ruin these on a hot grill to rare. Can't see how I would but better to ask
 
I love these, but can't find in stores here.  I know they're out of the chuck, but I've asked for them at different grocers, and they look at me like I'm from Mars.  Although there's a little place here that's straight out of DDD that serves an 10 ouncer, onion rings, and garlic mashed spuds for $8 on Saturday nights.  Not kidding:  $8, and it's damn good.  Thursday, they do (real) lobster mac & cheese for $14, but I digress....
 
If you're looking for some smoke on it, reverse sear is the way you want to go or cold smoke. If you can set up to cold smoke I'd smoke it for two hours then onto a hot grill or directly onto the coals caveman style (assuming you have charcoal.

If you can't cold smoke run your smoker as low as your can. Preferably below 200. When the internal temp reaches 20 degrees below what you want the final temp to be remove from the smoker. Then sear to finish, once again on super high grill or directly on the grill.
