Ok so I've been making my own snack sticks for a little bit now but I need some help. I ordered some seasonings from PS Seasonings, because of things I've read here on the forums. I don't make 12.5 or 25 pounds at a time (which is the sizes they sell). So my question is - Those of you that use them how much water (if any) do you use to mix the seasoning in? The instructions from PS say use 1 or 2 cups of water, but that is for the whole batch. I normally do 5 pounds at a time. Is 1 oz of water per pound doable?

I'll just use weight to figure out how much seasoning/cure to use per pound. If I'm leaving anything out please let me know. This is the first time I've used their seasonings.

In 5 lb of meat I use maybe a 1/4 cup.

The water amount is really up to you. I just add some to the seasoning to mix it up then add to the meat. IF I need more I will add to get the mixture I want.
 
AIG, I use 1/4 to 1/2 a cup of water.It really doesn't matter as it just means it may take a bit longer to dry in the smoker . The more water makes it easier to stuff IMHO.

I usually go about 5% and have done up to 10% water to meat. The mix probably has a binder or phosphates that could use the max amount of water added. Id start with about 6 oz , mix it up and if it's real tight add some more. But like mentioned you're making sticks , so the less water you add the better.
 
Different pre mixes can measure diff. I normally use 6 Tbs for 5lb batch. I dont fry as it imparts the taste so i taste test it raw, if i need more i add 1 Tbs more to the meat. As for water i use 1/4 cup. If you have to much AW your sticks will be runny while smoking.

Easier to add if needed than to have to much and try to use water to delete some of the mix.
