So I'm smoking a butt tomorrow, and was wondering if anyone has covered a pork butt in Apple sauce then smoked? It could be good, or really bad by burning, anyone have any experience with this?
Fructose, fruit sugar has a 230 caramelization point. Too much heat and it will burn. You can add the apple sauce the last hour if you stay at 225+/- a few. Search Brining a Pork Loin, for an Apple Pork Topper recipe...JJ
