Where should a thermal switch to protect for an over heat be placed? (PID controlled smoker)
I see that MES smokers have them on the back wall about half way up or better.
Most ovens/ranges have them on the inner ceiling/top; however, ovens don't have an exhaust out/near the top either like a smoker does.
On a smaller smoker, placement might not make as MUCH of a difference, but I assume it does on a taller smoker??
