Hey, new guy here from southern Ohio. I've been smoking for about year now, but just on your basic cheap offset. I haven't really been able to do any mods to it, but she still gets the job done. I mostly smoke pork butts, chuck roasts, and spare ribs, but I've been considering trying out some new things. I actually smoked steaks twice; first time - greatest steak I'd ever had, second time - worst steak I'd ever had. I've gotten on this site many times, but I've needed to ask some questions, so I finally created an account.
