just getting into smoking. a few months ago i bought a smoke hollow electric smoker and a smokai cold smoker. thermostat on sh smoker had some wild swings in temp so i built a pid controller ( already made a few of these since i cast my own bullets). i attached the smokai to the bottom of the sh smoker but it is hard to regulate and get the tbs i was looking for. chicken wings was the first thing i tried. they didnt come out to bad. did some chees next without using electric element. that was a disaster. smoked cheese for 3 hours and it is very strong. right now it is wrapped up in fridge and gonna sit for a while to see if it calms down. i was at the local hardware store couple days ago and i see a traeger pro 22 sitting there. (didnt know they were a traeger dealer). well the pro 22 went home with me. first try was a for pound meat loaf. kids told me that the wife isnt allowed to make meat loaf anymore only me on smoker. it came out great with hickory pellets. right now as i am typing it is fired up on smoke setting with a salmon fillet that was in fridge all night with sugar and salt on it. see how it comes out in a couple hours. local grocery has 7-8 pound pork buttes so that is set for saturday. any advice would be appreciated.
