Looks great Richie!  Were these the italian recipe?  I havent made any sausage in a while!

Al Thanks I have had afew people make it and they seem to like it.Thanks for the point I appreciate it

 Ingredients for 5 LBS. Fresh                            
                                                  
  5 lbs. Chicken Meat from Thighs and Legs skin on Ground               
  1 1/2   Tbsp. salt                                 
  8 oz. ice water                                    
  1 1/2  Tbsp. Fennel seed cracked                   
  1 tsp.  coarse Black Pepper                        
  1/2 Tbsp. sugar                                                  

 1 1/2 tsp. crushed red pepper (optional)           

  1/2 tsp. caraway seeds                             
  1 Tbsp. Basil                                      
  1 Tbsp. Oregano                                    
  1 Tbsp. Parsley
  1 or 2 garlic toes
  1 cup NFDM
 
I had to look up Pansit. that sounds good to.

I've been doing more chicken than pork also.  Stores have it on sale for less.  Got some for $0.59 per pound for thighs.  I figure that after I de-boned, trimmed fat and removed about half the skin(s) it worked out to about $1.00 per pound.  Although it was more work than Costco's $1.59 per pound for boneless pork butt this is also a hobby and I enjoy it.  The bones and trimmed skin I saved to make chicken stock.  Mmmm, chicken and dumplings.  My sweetie's favorite.  

Including some skin in the grind it seems to give it more moisture and seems less greasy than the pork sausage.  I like the texture.  Chicken breakfast/country sausage is my favorite for now.  But chicken, apple is also really good.

I figured about the same price wise $1.00 For the sausage, the Chicken soup and meat for the Pansit was free LOL
