Hey everybody,

I'm pretty excited about being in something like this. I have been smoking meats for about 1.5 years and I love it. My latest meal k smoked was two pork loins and they turned amazing. Trying out smoked tulibees tomorrow. My typical go to specialty is my smoked salmon, I like doing that because it's a healthy fish meal that my girlfriend loves. She always makes a avacodo lime cilantro spread that we top it with which compliments it very well. The reason I wanted to join this forum is because I always have questions before I start a smoking meal, and google works but I feel this will be a little more effective. One meal that I have smoked twice that I cannot quite make it just how I want it to turn out, is smoked ribs. They are good and always have good flavor seems they just dry out tad to much. Looking for tips, tricks and anything else. Excited to join!

Welcome to the forum!  Lots of info available here to produce some amazing ribs.  Try the search magnifier for ribs and take your pick from the many threads.  If you have questions, ask away, and we will try to help.  One thing I can mention is that if your ribs are dry and tough they are probably under cooked.  Over cooked ribs tend to fall off the bone and be very tender.
