Want to know if I can smoke using my regular bbq grill. Haven't decided which smoker I want to purchase yet. Want to know how to best use pecan wood chips to do beef roasts and other thick cuts of beef. I also want to know if Apple or Whiskey chips would work well with beef. Want to serve for business class graduation. Do I soak the wood chips for less burn and more smoke flavor and if so for how long.

Yes just set up your grill for indirect cooking. Put charcoal either all around the outside edges of the grill and put food in the middle or put it on one side and the food on the other. When I did mine that way I would put a water pan next to the charcoal to help regulate temperatures a bit better. I use pecan for everything I smoke pretty much. It has a nice mild smoke flavor that I think blends well with most stuff. Apple is also a good one to use

What grill do you have?  The Weber Kettle has a device you can insert into the grill to make it work like a smoker.

If you have a gas grill, you can use an AMAZEN tube or tray on the aide where the flame isn't actively going as long as the temperature stays low enough to not ignite the pellets completely.

Where there's a will, there shall be BBQ!

If you have questions about determining which smoker would be best for you, this is a great place to ask.

Don't bother soaking your chips, and pecan wood is a great smoking wood.
