Been smoking fish and other meat for probably 25 years. Started with linked/cased sausages about 5 years ago. Finally moved out of my Big Chief smokers and built my own out of a proofing cabinet that "didn't work." $10 in parts, and it worked.
It has had a few upgrades since this photo, and I'll post those elsewhere.
