My bride is out with customers tonight at some fancy steak joint, I passed on going since I really don't do the rah rah stuff... So, I mixed up one of my favorite things!
I diced up a couple of potatoes and a jalapeño, and then dropped them into some peanut oil to fry up!
While I was chopping taters, and slicing the jalapeño, I grabbed the large slice of the point from the brisket I cooked on Sunday. Dropped it into a pan of water, and brought it to a boil.
Once the potatoes were done, I added them to a plate, and then chopped the point slice into chunks, and topped the taters.
Just before eating, I added a little sriracha!
It was great, and I got to enjoy it without anyone worrying about my potential heartburn!
