$2.50, on sale, for a 12 oz can of Bacon Spam... I don't think so!

88 cents a pound.


5 lbs of shoulder and a $3.00 pack of Hatfield bacon... we're up to $7.40.


Ground up, let's say 8 cents of electricity.  $7.48


2 1/3 TBSP of Tenderquick

1 TBSP of Kosher Salt

3 TBSP of Sugar

3 TBSP of Corn Starch

1 cup of cold water

All made into a slurry, then mixed into the grind

Add, 20 cents

  $7.68


2 disposable 5x9 pans, $1.06, I think there was tax at the Dollar Store.

$8.74


Into the oven, in a water bath at 250 F for 3 hours, let's call that 35 cents.

$9.09


Dispatching the shoulder with a cleaver and ramming it down the throat of my grinder easily made up for the investment.

But so far we're at about $1.52 a pound... still less than half the price of the mass produced stuff, that doesn't make sandwich sized slices.

I think I'll pull 1 loaf an hour early, unwrap it, and finish it in the smoker. It will only be top smoke, but the flavor will be there.

Let's see what happens.

I've made this, but used cure #1 and added potato starch as a binder. One of the only things I fine grind! Turns out pretty good.
 
Out of the oven after 3 hours.

The gelatinous gooey goodness is still liquid around the outside,  everything is cooling in nature's ice box out back.

I put the foil back on, placed another cookie sheet on top, and weighed it down with a cast iron Dutch Oven.

It's got the color of Spam. Lets see how it tastes in a couple hours.

I'm going to have to start searching yard sales and thrift shops for a ham press.

Smoking isn't going to happen with this batch.

If you put Saran wrap in the containers first, they'll come out of them easy. Then you can Smoke them & I'll be able to get a Whiff from up here!!

I got impatient!


The tell tale goo is forming though!


It's definitely going to have to sit, weighted down overnight.

But, it's Spam... and even with all of the fat from the shoulder and bacon, it dry fries really well.



I came out of the pan with no problem.. I still might smoke one of them during the impending Snowmageddon of 2017.

And on square white bread, with generic salad dressing, it's like I'm 7 all over again. Only this time I chose to eat it, not because it's all there is to eat.

Looks great,I'm thinking you need to add a nice runny egg and grill that sammich next run maybe a slice of cheese. I'll be over shortly for mine!
