Cold front! Time for more salmon!

I know, Atomic Smoke and others will give me an I told you so, but here are more salmon filets in the dry brine!

Since we are going to be in the 40s at night for a couple of days, we decided to cure a couple more filets so the bride will have her salmon fix for a couple of months.

Each filet was just over 2 pounds each before I sliced off the tail and belly meat. Pay no attention to the other goodies, they are in different threads.

I mixed up a batch of dry cure and covered the filets up with them.

1 part brown sugar to 2 parts kosher salt. I also added cure #1 and some white pepper.

The tails and bellies were seasoned and then pan cooked for supper! Not a real pretty plate shot, but I was hungry!

I'll start the smoke tonight after my brisket is done.
 
I still prefer cold smoked,oh 40* is not cold it was 20* wind chill -2 LOL

Sometimes I cuss Texas weather, and then I see what some of my SMF friends are dealing with, I'm good! :biggrin:

These filets will be smoked all night tonight and possibly all night Monday, just depends on the taste.

Man it just warmed here to above 40! Heat wave!

Salmon should be tasty!

That's what my wife's coworker said yesterday, almost swim suit weather compared to what has been happening up there.
 
It's currently 54 here and we're supposed to hit 70 on Tuesday! Pruned shrubs yesterday and doing some garden prep today. Not sure if I'm grilling or smoking for tonight.

Yeah, we got in the 20's last night and its supposed to flirt with the upper teens tonight. My poor peach tree bloomed here about 4 days ago.

PS.  They are calling for 18-24 inches tomorrow night.    I may have to fly south.

OUCH!  Hope the peach crop doesn't suffer too much!

I won't say "I told you..." but probably still not enough.

Once the current cold front and snow storm have passed I will be following your tease...will move some sockeye from the freezer to the fridge.

Long queue formed at the smoker: bacon, cured loins, duck breasts, salmon.

We'll just have to see, I'm certain it isn't doing anything any good. Suppose to have a low of 18 Wednesday night. 

I guess since its going to be cold for awhile I'll try my hand at smoking some cheese. I've got an Amazin 12" tube coming with some pellets. Should be good for some laughs if nothing else.
