Using a smoke generator
Found a restaurant liquidation auction site and picked up a fridge and freezer both for under $500.
Now I have a small three turkey run in the brine for the initial run.
I've always hot smoked and wanted to be able to have the flexibility to cold smoke.
I live here in TN and have access to plenty of great wood. Hickory, Alder, apple, Cherry, even Peach for doing cheese. So I grabbed a chipper off of a guy on Craigslist.
I chip up the small branches and hang them in burlap to dry for two weeks.
I have a feeling this set up will be a far cry from my previous one now being able to do 24 turkeys at a time.
I'll keep y'all posted on the results.
