Both Dillon's (Kroger) and Wal-Mart were out of Spare Ribs, so bought a rack of Babyback .... I do prefer Spare Ribs though. Im not so much Anti-Babyback, just every time I hear the word, I hear the Chili's Babyback Rib jingle. I don't like Chili's, their food is always too salty for me

Now for some Q-View

Light coat of mustard and covered in my homemade rub



Wrapped in Saran Wrap to get happy for a few hours


Now. Last time I used the Yoder I ran out of heat after 2 hours and my coal bed was gone. This will be my 2nd legit use of it, gonna try to go 5-6 hours.

Also need to get some Canola oil on the outside to season it, gonna get that done during this cook
 
Going a lot better today. An hour in, added a wood split and still had a large coal bed.

I do have a strong south wind with my firebox facing it and last time there was zero wind. I have read that windy days interfere with fire management. However in my mind, wind helps "push" the heat through the cooker?

Ok roughly 2 hours in.

Im not going to foil ... Ive cooked a lot of ribs on the WSM, foiled because thats what you do .. but not gonna do it this time ..... after the foiling they always look soupy

However I did spritz and add more lump coil ..... I know "If your looking you aint cooking, but I had to add moisture and coals, so here is some Q-View
