Got to 200* choked her down a bit added ribs now here we go. My guru won't be here till Tuesday however I thought I better try it a few times without it to get the feel for it.
Calling this first wsm run a success. 250-275* minion method with kbb and hickory chunks.30* outside Temps wsm performed well with minimal temp fluctuations. Ribs were on 4 hrs. Maybe just a touch too long but they were delicious.
Thank you. They were pretty good. Been smoking on a 40"MES for 5 years now and got pretty good results from it. Been wanting a wsm for a while now and glad I did. I think with as well as it performed out of the box I don't think I'll have many issues once my digi Q is delivered.
I can't speak for the full sized versions, but if your WSM/Guru combo is anything like my mini/partyQ combo, you're in for a treat. Aside from starting the fire, it's easier than using my oven! Only downside is there's nothing to do but drink beer while the food's cooking. Or maybe that's another upside!
