How Did I Not Get Out Of Danger Zone

I normally use my 40" MES for a long smoke and my Akorn kamado for grilling. My outside outlet went out, so I had to use the Akorn last night. I put on a 7 1/2 lb. pork butt on and fought getting the temperature down from 300 to 240 for 1-2 hrs. Finally got it stable, checked on it several times, and it was ok. I went to bed and checked it a few hrs. later and the temperature had dropped to 200, so I worked to get it back up. Then, I checked the IT and it was only 134-135 in a couple of spots. How did it not get out of the danger zone in that amount of time when the temperature was too high for part of the time?

Maybe your Therms are off ??
 

I wouldn't worry about it though. Besides I believe the upper number is actually "135°", but we round it off to 140, because it fits better with "40 to 140 in 4 hours".

And if you didn't inject or stick it before smoking it, those numbers don't matter anyway.

Yeah, you usually can't trust a built in Therm.

With a Digital Wireless Therm, you can put the Smoker Probe just a few inches from the Meat, and get an accurate Temp of the air right where the meat is, instead of some place where the stationary sensor is.

I love my ET-732 Mavericks.
