I saw that you were heading to OH, safe travels.

The soy protein is very interesting in the sticks. In other larger sausages I've used it in I was really pleased with the texture and the moisture content I had. In the sticks, I'm blown away! When I pulled them from the smoker at 150 I took them inside to rest and carry over. After about 30 minutes I tried a piece and it was still a little warm, and it was almost juicy!

This morning, after resting in a paper sack all night on the counter, I almost thought these things weren't completely cooked, they are that moist. I'm going to vac pack later and refrigerate. I'll see how they are in a day or so.

But to answer your question, I'll use it again, I like what I'm seeing.

 lolol ... It does look good, Now that you have tasted it how do you think the ECA mixed with it would have turned out like? Trying to imagine what I may have tried with that tang. Only thing I can think of would be the dry cured stix you can get anywhere ... Just wondering.

I just wanted to comment on your sausage stuffer I was using plastic bulldog clamps to hold my S S until I saw a pix using  3" suction cups can`t remember where but I found them on AMAZON I believe they are the same ones that are on the french fry maker it worked better for me  HTH

Now I gotta buy soy protein
 
Charlie they look great I used it a few times,my soul surviving friend can't do any dairy and he was able to eat them.Points for trying something different.

I don't think this mix would pair well with the ECA. When I did the dry powder taste it came across as kind of a southwest kick, so I left it out. I love the stuff in SS and in some of my more porky sticks.

Hi Paul and welcome to SMF!

My stuffer is mounted to a 1x12 board that goes across my counter and is then clamped down. The suction cups are a good idea though.

Thanks for the points. Pound for pound, the SP is going to be more expensive than the NFDM, but I'm thinking I like it better!
 
Good looking sticks, especially like the cut shots.  What soy protein did you use?  I've never tried soy in mine.
 
My sweetie has a few health conditions and hasn't been feeling well lately.  So I've been doing a lot of cooking also.  My freezer is getting kind of full.  I do need to go visit Mom & Dad and will bring some to them.  And for MIL, she is a always an appreciative recipient.  

I'd email you all some beers if I could just figure out how, must be a problem with my keyboard....

Your sticks look great Charlie, we are gearing up for the largest turnaround in our plants history, I know how you feel, all I can say is some days are better than others.
