Ever had one of those weeks? Our company is going through an upper lever reorg and everyone is freaking out! I'm sitting back laughing at most of them, but had 2 of my peers jump ship last week, so this week I was pulling double duty covering 2 plants!

It's sausage making time! Snack sticks actually. Some people need a shrink for therapy, all I need is meat and smoke, so I'm self medicating tonight.

I got a new seasoning blend in the mail last week that I've been wanting to try and I also wanted to see how soy protein would do in snack sticks. So, I've poured a stiff one, and I'm about to grind up some chuckies. More after I stuff...

I have been known to over medicate 2mg xanax i feel like homer licking the frog.

Okay I'm in! The last three days at work has been a $h!t show too. I'll be smoking some appetizers tomorrow. We have a bunch of friends coming over for appetizers booze and games! Maybe even make some jerky if I get my act together! Have pork loin waiting to soak in Thai marinade.
 
I'm with you, Cranky! We're busy as heck here just short of meltdown. I'm driving semis again for gosh sake. Leaving for Dayton for a week Sunday, but the Mrs is flying to TN to see a new granddaughter so I have all day Saturday & part of Sunday to myself. It's going to be in the 60s here!
Got a butt rubbed and ready and am mixing 5# of beef sticks also. Tomorrow is mine. I need it.
I'll be watching between beers :-)
 
Ok, I'm in for this ride..... I know all about having bad days at work..... I had a bad week, everyday was something else, So I can appreciate the feelings you have right now....  Yep I'm watching this through...

Glad to see I am not the only one who uses drinks & sausage making to decompress. Curious what blend did you get in? I should send some of this ghost pepper stick seasoning I got down there to ya people have been begging me to make more.
 
Alrighty then! Looks like I'm in damn good company here!

I got some seasoning from Walton's that's called "Willie's Snack Stick". It's packaged up for 25 pounds of meat, but a little math later, I got it down to 10 pounds...

I've used soy protein in the past for sausages, but I've never tried it in snack sticks, so tonight I used the Willie's and added the soy. I have to say that this mix looks like a keeper based upon the patty fry ups I've done.

I measured everything out

Mixed the seasonings and cure into some water

Then I mixed the seasoning slurry into the ground chuck until it was quite sticky.

After mixing it all up, I washed my hands and went into the garage to have a beverage and a pull or 2 on a nice cigar. When I came back, I found this... it seems that my bride knew I was having a bad week and brought me some flowers...

Then it was time to stuff. I filled the stuffer and went with 16mm collagen casings... Case, are you paying attention?

All stuffed and ready to smoke tomorrow! Hanging out in a bag until I get home from work around noon...

Finished pics tomorrow, I'm whooped for the day....

Looking good, Charlie. A good cold spotted cow here tonight myself. And thanks to the suggestion, a few minutes on the deck with a good Dominican stinker. Life may be hectic at times, but also oh, so good at the same time.

Those are some pretty stix, Cranky!
Did the SPC make stuffing any tougher? I'm getting ready to do 16mm through a 1/2" tube myself and can't decide...

It seemed about the same. It's always tough running through my 3/8" tube, and this was no less a PITA.

Worth it in the end though, love the skinny sticks.

1/2" tube? I'm not sure the 16mm will fit on that diameter, double check before you get all set up.
