I am building a large event trailer for a client.

He seen one of the other trailers I built and got a case of big dick syndrome.

So I didn't F* around when he said he wanted something big to wow the crowds.  I went straight for a 2000 liter (500 gallons) reverse flow and am adding a 500 liter vertical above the firebox.

As steel is stupid expensive here I decided to use a 250gallon (1000 liter as the firebox. You can't see it but 2/3 of the way down the inside of the tank is a blank off plate to seperate the firebox for the smoker and the Brasero for the parrilla.

So we went big on the parrilla 240x70cm  should do it.  it will be mounted over the brasero ( hot coal maker) adjacent to the smoker. I hade a gap in between them, so decided to use one of the small 500mm tube I use for the small smokers and  use the heat from the brasero and firebox for an oven.

The end cap I cut off the 500 gallon tank I am re using on the front of the trailer for and al asador with 3 crosses.  Also reusing the end cap off the 120 gallon to make a gas fired paella disc that will hinge from under the stainless table.  He also wants a freezer and I am going to try and make space for a whole pig cooker.

Let me know if y'all think of a good name for the trailer.

Notching it out for the vertical smoker

Yep my 500 gallons have 3 racks!

vertical smoker with the oven in the foreground.

On the vertical the door is quite large to allow the racks to pivot out for easy access.  The small door on the left is to load wood into the Brasero to burn and make coals for the parrilla.

The oven will have 2 horizontal racks and the stack from the brasero (hot SOB) will go up the back of the oven.

I will make the bumper removable so nothing gets burnt.

Still haven't figured out a height for the stack yet.    The owner is coming tomorrow, so see what he wants.

it is 2 inches higher than ride height at the moment.

That thing is huge. How much meat you figure it would hold? I will be building a rf this summer if all goes well. Love seeing your work.

So the client done a 180 and decided to change many things

He decided against the vertical part of the smoker and wanted something more symetrical.

Now we have an oven in between the brasera shown below and the firebox for the smoker.

He also added a bunch of gas elements in front of the parrilla for cooking and wants to sheetmetal in the rest of the trailer. It will have 2 large stainless tables on the front.

Used a jack to make the part we added on perfectly round.  This is the brasera for burning wood.

The 250 gallon wasn't long enough to go all the way across the trailer.  The other part on the end is from a different diameter tank (800 vs 850mm) . We cut a strip oout of the 850mm and forced to a 800mm diameter.   This is another oven in between the firebox for the smoker and the brasero.  Should get pretty hot in there.  We left the feet on the tanks and will weld the bumper directly onto them.

A 500 gallon isn't a 500 gallon unless you have 3 racks :)   The reverse fow plate is the side out of another tank.  We took it to a sheetmetal bender and they flattened it a bit with a huge press.

we welded 2 of the tubes I have together to make a 2 meter long oven.

 Chassis all painted

Bresera on lower left, oven in between the brasera and firebox on the right.  long tube across the top is warmer draw / oven.

parrilla and brasera.   Trailer is 6.8 meters total length.

The stack from the smoker protrudes into the oven to conduct heat.  the oven will have 4 slide out trays.

The asador swivels 180* and locks into place with a pin. here's where the fire goes and the crosses with the meat get mounted around the outside.

Here's the design for the 8" square stacks

Open the door of the brasera, scoop out the coals and shovel them into the parrilla.

We make our own fenders.  Get the sheetmetal place to fold the grooves etc then we roll the curve using a piece of cylinder and clamp it to a steel table.     There's still a bunch to do on the front of the trailer.    I may have to stop on this for a while as have an urgent smoker/ pizza cooker to build this week.
