Hi all,

I am new to the forum but not smoking. I recently went to a Masterbuilt and so far nothing but good results. I need to add the cold smoking kit. I have a pork butt in as I type.

I do have a question. My local Sams Club has corned beef from brisket on sale for 3.20 lb. Has anyone had experience hot smoking corned beef for pastrami?

I am new to sausage making. I recently picked up Michael Ruhlman's book and having much fun with that. Making hot dogs tomorrow. My first go around with bacon came out salty but a rinse takes care of that. Next time I'll leave the cured belly in a water soak for a couple hours before smoking,

Welcome to the forum!  I'm not familiar with pastrami, and not a fan of corned beef.  Try the search tool at the upper right and look for pastrami recipes.  Glad you joined us.

I prefer to make my pastrami from a brisket, curing it myself first.

However, I do make it from store bought corned beef as well.

It's quite easy to make.

First soak the CB in water for 6 hours, changing the water a couple of times, to get the excess salt out of it.

Then coat the CB with some mustard & black pepper & the spice pack that comes with it.

Smoke it at 225 until about 165, then foil it  with a little liquid until about 200-205 or until it's toothpick tender.

Rest it for an hour or so & it's ready to eat.

I usually refrigerate it over night, then slice it thin the next day.
