Looking for a jalapeno snack stick recipe

Mine is not venison,,, 80/20 beef but good,,,, Pre mix from Spokane spice co. I can not keep enough of it around

Venison will work just as good if you have the right fat content

Any beef / pork recipe mix for snack sticks I have used I have always substituted for Venison / pork. As a norm I seldom buy beef, ( Although I will be for briskets....) 

  There are a few good recipes on here to try, I would look through the threads and see what catches your eye. I Can give a canadian style jalapeno smokie recipe, but that is not a stick recipe, although could be adapted. I also do my mix for sticks at a 70/30 venison pork mix, If you like it dryer 75/25 works as well. Let us know what you come up with. Thx. and good luck.

I had great success with AC Legg #116 with added jalapeno powder.  Turned out great.  I also made a batch with the 116 powder and Sirratcha.  10lbs of each disappeared in 2 weeks.  I based it off this post.
