My profound thanks to all who replied with their words of approval and encouragement.  As mentioned originally, this is a hobby where we all learn from the experiences and efforts of others - by "standing on the shoulders of giants" who have come before and are still there with us, all working on the things we love.  It's this sort of cameraderie that encourages the continuation of everyone's efforts.

Not everyone mixes NFDM with water. I add a little at a time dry while mixing, and I think I spend more time cleaning up than anything else!
Nice ride so far and looking good!

NFDM, mix in dry, mix in the water, either way, it'll do the job.

I'm with Mose, I seem to clean more than anything else!

Now, as for authentic, if you like it and you followed a process for a specific type of sausage, it's perfectly authentic in my book, authentically yours!

I'm in on this too. You have done a Fantastic job for your first attempt. The problem now is that you have now got hooked an I see you making sausage for a long long time to come, heck mabe you should make some boudin too. I see you are in Cajun country so you will have lots of friends who will want to join in the fun. Once again, great job on the sausage. Pat yourself on the back.
