Our local store had a 4# boneless butt for $10, and it looked like it needed a home.
Dry rub, wrapped, overnight in the fridge and into the smoker at 10:30 this morning.
Seven hours at 230, ramped up to 270 on Apple and Hickory. Spritzed with Apple juice every hour.
Pulled with a little Carolina sauce and put beside coleslaw and home baked bread.
All now happily sitting in my tummy with plenty of leftovers. :)
