Hi I have a question regarding jerky & snack stick. I have a jerky recipe that I like, but do I use the same amount of seasoning for Jerky & snack stick or is there a general rule to use so much % less for snack sticks. I hope I'm making sense.
 
There is no conversion from jerky to sticks that I know of. If your jerky is good, grind it and do a test fry. Needs more of something, add it. Too strong a flavor, add more meat and stuff the casing. Can't be much different than the ground jerky guys make. Good luck...JJ
 
For what it's worth, Hi-Mountain says to use the following amount of seasoning for 4 lbs of meat.

Note the amount of cure is the same.  And their whole muscle is dry brined instead of marinated.

Whole Muscle - 2 Tablespoons

Ground meat - 3 Table spoons + 1 Teaspoon = 3.33333 Tablespoons

I am assuming it has to do with the seasoning being mixed into the meat vs. being on the outside.  A matter of how much is near your taste buds??

But I would try small batches until you figure it out.

I have turned a couple jerky kits into snack sticks as well as a sausage, Definitely do a fry test and see if you need to change it. Mine have worked out well in the past. 
 
Hello. The amounts shouldn't matter. As long as you're planning to make the complete batch from the recipe. If I were using a pound of top round and making regular whole muscle jerky, for example, I'd use the entire pound and whatever seasonings that will go into that particular recipe. Likewise, if I were planning to make a pound of ground beef and using a jerky gun to make sticks, it'd be the same equivalent. So the amount of seasonings shouldn't matter, as long as the flavors are coming out the way you want it. I have a jerky site currently with 9 flavors you guys can check out.
