Newbie to smoked meats- awaiting delivery of a Weber Smoky Mtn 18" smoker, and I live in Charleston, SC. In addition to the usual pulled pork, brisket, and ribs, I'm interested in learning to make my own Canadian Bacon, Tasso ham, Westphalian /Black forest hams as I gain the requisite skills.
