So, the bride asked for me to make room inthe house freezer. She handed me a pork loin and said to do something with it.

I also had an eye of round that I needed to do something with...

Well, for the first time ever, I'm mixing meat types in a brine/cure/marinade.... I'm using dirtsailor's Thai jerky recipe.

Both joints of meat were sliced into 1/4-5/16" slices. The mix and cure were combined, and I'll smoke this weekend.

No sexy pics, but here are a couple.



6.2 pounds total added to the smelly sauce!

One these days i will let y'all in on some jerky i made from a ham. Right now it falls under the AP-10 Sensitive information act.

I've made jerky from ham before. Ours turned out pretty tasty. When I lived in Hawaii there was a guy at the Hilo farmers market that sold a pineapple teriyaki ham jerky that was damn good.

Anyone up for some Spam jerky????

We are addicted to this flavor of jerky.  It's like meat crack!
 
Is anyone willing to share a thai jerky recipe???/ That sounds good.... Like I need more on my plate for this spring.... Please

Man Cranky,  You again have me watching with pen in hand to add to the to-do list.  The wife has been grumbling about my meat freezer being too full of the venison goodness that she cant find the pork butts she bought recently.  Gonna have to rearrange and get to that stuff soon.  Along with venison dried beef, Canadian bacon, etc. etc. etc.. Only problem--temps for the next week here in the single digits for highs and lows in the hurt your face range.

Nice start, I'm in.

We just finished a batch of jerky after marinating it in Jamaican Jerk sauce.  Outstanding.  I bet the Thai jerky would have gone great with a peanut sauce.
 
I'm in. I really need to try this. Maybe I'll "sneak" a bottle of fish sauce in the grocery cart this weekend.

I need that recipe! I have more ham steaks in the freezer than I can eat before they get freezer burn.
