need help with amnts and mes 40

I have a mes 40 and the amnts 12 to 18.  I have been trying to smoke cheese the temp outside is 35 degrees and the electric thermostat is set to 40 but the temp keeps climbing to 100. also smoke seems to be almost to thick sort of harsh when I smell it. any ideas
 
Keep the top vent wide open & leave the MES off.

I also take out the chip loader for better air flow.

do his pellets leave any black goo behind.  mine do and I'm not used to this, as I have always used sawdust until now.  its not much but I heard this is a sign of bad smoke.
 
Black goo where?   It will turn the smoker back on the inside as with any smoker.  

The smoke will be thicker when cold smoking.
 
I dont get anything like that on mine. Any pics of your set up?
 
I don't know about goo but you will get black char on your tube smoker. You are after all burning pellets.

Cold Smoking cheese when it's that cold calls for you to turn your mes on. I like to keep the temp between 70-90 in the smoker. Anytime I've tried to cold smoke in cold temps the smoke is way to thick and white. It's even to thick and white when I have the smoker on sometimes in cold weather. I'd love for someone to tell me how to fix that issue.
 
no pics right now but my mes 40 is 2 years old and the vent is on the top left on the side of the unit . amnts is on the drip pan above empty water tray.  cheese tasted good except the chedar melted some . mes power was only on so I could read the thermometer on unit and use timer, temp was set to 40 and the element never turned on but the temp rose to 100 after about 40 min. of amnts smoke.  the smoke seemed pretty white and thick also
 
The "goo" almost sounds like creosote generated from moist pellets.  You may want to dry the pellets in a microwave prior to using them:  search "drying pellets" on the forum's search engine, and there's numerous threads.  I believe Wade (IIRC) had a video also.
 

dried my pellets in the oven as described in another thread.  also moved amnts to bottom rack so air flows underneath as well seems to solve problem in the mes 40.  worked great smoking salmon at 135 degrees. as far as temp inside smoker being too high for cheese I started smoking cheese on my bbq it has better air flow and it is not insulated, temp still gets up to 80 which is ok.  just put amnts on bottom rack and cheese on top rack at other side of bbq.  smoke still looks white to me but it sure tastes good. 
 
I put my pellets in the microwave for a minute then stir them and go another minute, then throw them in a strainer and shak out the dust. Put them in the 5x8 maze and hold a torch on the starter hole until it turns cherry red hot. Let it set and burn for a while then blow it out and place it in you MES almost anywhere and it will smoke as log as you crack the chip loader a bit for air. I think the combination of hot, dry, dust free pellets is the cause of a nice clean steady thin blue smoke.
This isn't original, although I don't recall my guess is that it's most likely something I learned from Bear.

The Tube puts out too much smoke for an MES 30 or 40.

You can try filling it only half full, and then hold it horizontal & shake it, so it's only half full on its side. Then light it.

It doesn't work for me, but some say it does.

Best thing for a smoker that gets too much smoke from a Tube is like I do---Use the AMNPS "Maze Tray". Then you can use dust for cheese & other cold smokes, and Pellets for Hot smoking.
