NOTE:  I can be wordy ... just a warning.  ::giggle::

Let me get this out of the way first ... I suck at grilling.  Ok, I feel better now.

I grew up in an area that grilling wasn't used all that much.  Instead, we smoked our meats in the ground.  Yeah, I grew up in Hawaii.  

I moved to the South early in life, and during my first occasion to eat smoked food, I was turned off because it was nothing like what I was used to.  Hickory?  Mesquite?  It always tasted burnt to me, so I stayed away most of my younger years.

I was introduced to a different kind of smoking later on, and I was hooked.  I didn't know it then, but what was different is the wood used to smoke was not hickory and mesquite, instead they were using fruit trees.  I was sold.

Recently, I was given a smoker as a thank you gift.  A 30" Masterbuilt Pro Electric Digital Smoker.  The couple that gave it to me said I absolutely had to follow Jeff Philips, so here I am!

I actually smoked my first thing today, and I gotta say, I AM HOOKED!

I had a cheap turkey in the freezer since before Turkey Day.  I am a caregiver to my 94 year old mom and she gets free food at times.  I got one last Turkey Day and when I cooked it in the oven, IT SUCKED.  I was not looking forward to cooking another.  So I said to myself, it needs to get out of my freezer, let me use this as an experiment, I felt I wouldn't have lost anything if I had to toss it.

I brined it overnight in just salt/water, dried it and then buttered it and used some Kansas City Rub (that was recommended by the couple).  Like I said, not a fan of hickory or mesquite so I searched for what would work with a turkey and settled on peach chips.

I am looking forward to learning from you all here.  I have spent the last week just looking over everything and decided to take the plunge and join today.

Welcome to the forum Biz!  I use Jeff's rub on everything and it is amazing!  You ever had huli huli chicken?  It's Hawaiian and on the top of my to do list!  Great job on that turkey!  Glad you joined us.

Ah yes, Huli Huli Chicken, a Punahou Carnival fave!  Yeah, it's on my list.  I guess I need to find a kiawe wood chip source soon.  Oh the possibilities.  Thanks for the welcome!
