Brisky point beef tips on a baked potato

Well you make brisket and only three people are eating it your going to have leftovers. So I chopped up some of the point fried up some mushrooms and onions made a roux added some beef broth and brisky drippings then the meat. I buttered the over one pound baked potato and topped it with the tasty beef and gravy mixture what a healthy dish. I wanted to crisp the meat but time and hunger were against me.

Just so happens we have baked taters in the oven for dinner tonight!

I have a few Scarbelly wing scraps going on top of mine!
 
Love it!  That is my kind of loaded potato!  I don't do sour cream or cheese!

I've done pulled pork and cheese but never thought of chicken, now I'm thinking chicken bacon alfredo tater.Thumbs Up

Thanks Al,it was tasty next time I'm searing them crispy or tossing them back in the smoker that will push them over the top!
 
That looks awesome! My favorite local eatery had a lunch special yesterday that was a thick slice meat loaf pattie with gravy served over crispy home fries and a side of green beans. It was fantastic! I like your idea of brisky points over the mashed tater too!

  So yes smoking will happen when I get home.... But the big plan is to build a smokehouse this spring. I have about 3 months to do all we can......
