beyond ones control "sausage fails"

I'm always in the kitchen every week making some kind of sausage. last week I decided to make some snack sticks using some seasoning that foamheart sent me from Louisiana and they came out money..... Best I ever had. They were impeccable. So into the kitchen to reproduce the seasoning and make another round. After a little bit of this and a little bit of that mixed up, round 2. "Fail". The snack sticks were totally wrong. Don't know what happened. Everything was a disaster from the casings down to the texture. Even the local tail-waggers will question me. "What the hell is this Sh*t"! lol. So into the dehydrator to try to improve them and it got even worse.....The casings came out dry as a popcorn fart along with the meat. When you bit into them the fat would squeeze out from the dried meat..... My process was spot on from the last batch. Nothing changed other than the seasoning which contained your basic paprika, brown sugar, garlic powder and onion powder and flavor enhancers....

Sausage fails are sometimes beyond ones control. Even the best of us who have made countless amounts of sausage has a fail every now and then. Trying to find the needle in the haystack is pointless. Just pull your britches up, wipe the sweat off you brow, feed the mutts and get back to grinding....

Coming from you, that's crazy!

I would have never thought you would fail at making any kind of sausage!

It's nice to hear even the Guru's have a bad one once in a while!

Now that just sucks! What makes it worse is that you knew they were going to be great only to have them go south on you.

When the pooch won't eat it, you know it went wrong... No sense in asking questions, I'm sure you've already answered what most of us would ask you.

Yup

At times it happens but i dont give to my pups, they way to small.
 
Nothing worse than looking at an entire batch of sausage you slaved away on that you can't eat. Been there, done that!
 
Yep....  I've made sausage that I won't eat and the dog wouldn't eat it either....   She was a smart dog...  Me.... not so much....
