I want to say that this is a combination of a couple techniques that work really well..
So I went to Sams and they had on sale drums for like $5.00 for a package of 16.. so I figured what the hell.
Step 1. Buttermilk brine:
1/2 gal low fat buttermilk
1/2 cup salt
1/2 cup brown sugar
1/4 cup Owens wing rub
3 cloves of garlic
Into the Briner overnight
 
Step 2 *
Drink liquid and cut around the bone and separate the meat from the leg.. cut all the tendons and little sharp bones.. at this point trim any hanging fat ang veins

* note. This is a real pain in the ass leave yourself 45 mins..
 
I was hoping you weren't "drinking" the liquid, unless you'd planned a quick trip to the hospital.

Enjoy that free cherry:  we've got a bunch of orchards near us, but I've yet to convince any of them to "donate" the wood to my efforts.
 
Sounds like a good meal and that brine has my attention.

I thought to myself, "drink the liquid? There ain't no damn way that's gonna happen!" :laugh1:
 
I'm using Coco Swift which is charcoal cubes made from coconut shells. I'm am very impressed with them
They are very hot and long burning!!!
 
Wow! That's a lot of trouble to go to for chicken legs! Looks pretty exotic though. Your cherry glaze sounds interesting to me also.
