Santa Claus brought me an awesome Camp Chef Smoke Vault.  I first experimented with some chicken wings, bone-in chicken breasts and Italian sausage. Chicken wings cooked a little too long and sausage was tough but the breasts were perfect.  On New Years Eve, I took a leap of faith and cooked prime rib and pork picnic shoulder. Both were so good that I couldn't believe it.  I have to credit the tips in these forums for my success though.
 
Welcome from SC. It's really good to have you here on this great site. It sounds like you're getting off to a great start. Prime rib is not easy to get right, so congrats. Please post some pics when you can.

Well you have discovered the GOLD mine here. Welcome to SMF, Playing with temps, woods etc is a lot of fun and experimenting until you find your flavor/thing. Good on you for trying all those things, Now just remember the pics and lots of info availiable to get or give. This place is great.
